We just reopened our Hop Hideout doors on Saturday 10th January and it was brilliant to see so many of you pass by. We’ll be doing lots of restocking next week, so don’t worry!
We did however pop #onthetaps this amazing mixed fermentation, nectarine wild ale from @crossoverblendery 🍑
“Crossover Blendery is located at Lannock Manor Farm in rural North Hertfordshire, UK. A beautiful, quiet place surrounded by rolling arable fields and small pockets of pasture. Founded by George and Charlie in 2018, Crossover Blendery is focussed on producing complex beers which challenge and intrigue the drinker. The beers age in old French oak barrels for many years. And the fermentations are spontaneous, meaning it is only wild yeast and bacteria which operate in these ales.”
🍺 Persia is a blend of 1, 2 and 3 year old golden ales brewed with malted barley and raw wheat. Spontaneously fermented and matured in neutral French oak barrels. Then refermented on Diamond Bright nectarines grown in Kent, UK. It’s tart, with juicy peach, citrus and earthy funk notes. Deliciously complex!

Mixed Fermentation is a brewing process using multiple microorganisms think e.g. yeast plus bacteria or brewer’s yeast plus wild yeast or a mix of naturally occurring wild microorganisms. Creating unique and complex flavours. Microbes often involved include strains of Saccharomyces (brewer’s yeast), Brettanomyces (wild yeast),Lactobacillus (lactic acid bacteria), and Pediococcus (lactic acid bacteria).
