#onthetaps we’re thrilled to be pouring this woman-led brewery from Moravia, Czech Republic - Wild Creatures for the first time. We tried bottles from this brewery at our 10th birthday celebrations back in 2023 and have been hoping we’d be able to source more of their amazing spontaneously fermented beers. So huge thanks to @rivingtonbrewco for that!
Jitka Ilčíková, pictured here, tasted her first spontaneous beer in Belgium over ten years ago and immediately fell in love. Being a winemaker herself and with her husband running a small local brewery, she decided to combine these two worlds. Wild Creatures Brewery was born. Jitka is master blender and the soul of the brewery. With deep knowledge of all things spontaneous she’s a frequent speaker at conferences worldwide.
The beer we have pouring is Rheum their ode to rhubarb, 6.3%. It’s a wild ale, tart and fruity with great acidity, all in harmony with the rhubarb.
