Weโve reimagined the spirit of a Yo! Sushi bite, starting with locally cured salmon bathed in beetroot, sugar, and salt for vibrant colour and delicate flavour. Nestled in a crisp nori shell, itโs finished with cucumber gel, wasabi mayo, puffed wild rice, and borage flowers for a bright, crisp, and utterly addictive balance of textures.
